Tray Bake - Halloumi and Mediterranean Veggies
Method
Heat Oven to 200c (180c fan)
toss onion, garlic and zucchini with oil; roast for 10 minutes
Stir in cherry tomatoes to mixture, place halloumi slices on top and season
Roast for a further 15 minutes until tomatoes are bursty and haloumi is golden
finish by squeezing garlic cloves out of skin and over the rest of the dish
Ingredients
4 zucchini, cut into small chunks
1 red onion, cut into thin wedges
3 large garlic cloves (skin on)
3tbsp olive oil
300 gm cherry tomatoe
250 gm haloumi
1/4 tsp cumin seeds
dried chilli flakes
