Vegetarian Chilli

Summary

  1. Saute

    1. Onion

    2. Sweet Potato, Eggplant, Spices & Garlic (until fragrant and eggplant has collected oil)

  1. Deglaze

    1. Add stock

    2. Stir through quinoa

    3. Place tomatoes on top but do not stir through

  1. Pressure cook

    1. 8 minutes, high pressure, quick release

  1. Finish

    1. Reduce in the pot until thickened (Approx 10 mins)

    2. Serve - add toppings to taste - HP sauce and cheese is a good time.

Core Ingredients

  • 2 tin mixed beans (eg: four bean mix\ 1 black bean\1 cannolini bean ~ 400gm)

  • 1 tin crushed tomatoes (400gm)

  • 1 medium sized, yellow onion (diced)

  • 2 medium sweet potatoes (unpeeled, diced in chunks)

  • 2.5 cups (~600ml) vegetable stock

  • 1 big ol eggplant (diced in chunks)

  • 4 cloves of garlic (crushed\diced)

  • 80-120gm uncooked quinoa

Spice Blend

  • 4 tsp chili powder

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 tsp coriander seed

  • 0.5 tsp sugar

  • 1 tsp salt

  • 1 tsp pepper

Finishing

  • HP Sauce (Big ol squeeze)

  • Cheese

  • Crunchy tortila chips

  • Sour Cream\Yoghurt

  • Avocado
