Tray Bake - Halloumi and Mediterranean Veggies

Method

  1. Heat Oven to 200c (180c fan)

  2. toss onion, garlic and zucchini with oil; roast for 10 minutes

  3. Stir in cherry tomatoes to mixture, place halloumi slices on top and season

  4. Roast for a further 15 minutes until tomatoes are bursty and haloumi is golden

  5. finish by squeezing garlic cloves out of skin and over the rest of the dish

Ingredients

  • 4 zucchini, cut into small chunks

  • 1 red onion, cut into thin wedges

  • 3 large garlic cloves (skin on)

  • 3tbsp olive oil

  • 300 gm cherry tomatoe

  • 250 gm haloumi

  • 1/4 tsp cumin seeds

  • dried chilli flakes
